I made 2 egg dishes: filo pies and a fritatta. I’ve made fritattas before. They aren’t that hard. But the filo pies were hard. Filo is difficult to work with. I roasted a pan of potatoes, parsnips, and onions. Then I added them on top of the filo and topped them with cheese. I added the egg and then baked.
